Preparing Anda Parathas:Step-by-Step

Dough Preparation of Paratha

1. Start by making parathas dough: the dough should be quite soft, not at all sticky Here is how you should make:

1. Put whole wheat flour, salt, and sugar (if using) in a big mixing bowl.
2. Gradually add water to the flour in small portions while kneading to make the dough soft and not sticky.
3. Add ghee or oil to the dough and knead well for almost 5-7 minutes. This can make parathas soft and flaky.
4. Dough should be smooth and elastic in consistency. Place a damp cloth or plastic to cover it and let it rest for almost 15-20 minutes. Resting helps to roll out easily and gives soft parathas.

Step 2: Egg Filling Preparation

It will be helpful to prepare the egg filling when the dough rests. This is the egg mixture that gives Anda Paratha its special taste. You go ahead to prepare it by doing the following:

1. Crack the eggs in a bowl; whisk them until they are smooth.
2. Mix into the eggs all the ground spices including onion, green chili, tomato (if using), coriander leaves, turmeric powder, red chili powder, cumin powder, garam masala, salt, and black pepper. Mix everything well.
3. Heat 1 tablespoon oil or ghee in a pan on medium.
4. Put the egg mixture in the hot pan and scramble the eggs while occasionally stirring them. You would want them soft, not dry; so set them until they are just almost set. Take the eggs out of the pan and set it aside. They will cook further in the paratha.

Step 3: Rolling Out the Paratha

Since the dough has rested, it is now time to roll them into parathas. Divide your dough into smaller balls for the step.

1. Take one portion of dough and roll into a ball size similar to that of a golf ball.
2. Lightly flour the surface and roll the dough ball into a flat, round shape about 6-8 inches in diameter. It must be even in thickness. You could roll it flat with a rolling pin using gentle strokes so you won’t tear it.
3. If already sticking, add a little flour on the surface or oil your hands lightly as a preventive measure against sticking.

Step 4: Adding the Egg Filling

Once you’ve rolled out the first paratha, it’s time to add the egg filling.

1. Heat a tawa, griddle, or frying pan over medium heat. You’ll want it hot enough so that the paratha cooks evenly and crisps up.
2. Place the rolled-out paratha onto the hot pan and cook for about 1-2 minutes until the bottom begins to lightly brown.
3. Flip over the paratha and apply a layer of the scramble egg mixture on half of the paratha.
4. Fold the other half of the paratha to top in half-moon shape, with a spatula which is pressing the paratha very gently.
5. Cook for 1-2 more minutes on both sides till both sides are golden brown and crispy. You can drizzle a little oil or ghee on the paratha while it is being cooked so that it comes out crispy.

Serving Anda Paratha:

Once the Anda Paratha is golden brown and is well cooked, take it on a plate. Cut it into two or four according to serving. Serve it hot with whatever accompaniment you want to:

Yogurt or raita, cool yogurt-based chutney
Mint chutney or coriander chutney
Pickle, mango, or mixed pickles for the extra zing

Perfect Perfection in Anda Paratha

1. Fresh dough : Parathas will become soft and elastic if dough rests for 15-20 minutes. If the dough is fresh, while rolling out parathas it is softer resulting in softer outputs.
2. Season to taste: Season egg mixture according to your taste and preference. Then add other stuffing such as cheese, bell pepper, or spinach and prepare stuffing Anda Paratha.
3. Scrambled egg texture: The filling must be an egg cooked in a way that is soft, moist, and not overcooked or dry. Scramble them just the right amount so they form their shape while still being soft.
4. Use ghee or oil while frying paratha as that gives good taste and crisp texture. This turns out a much richer flavor with ghee since it increases the flavor profile of the paratha.
5. Spice lover. Add green chilies in case you enjoy it more spiced or chilli flakes with your egg mix. Sprinkle chat masala or black salt as you love its taste also.
