How to make Dahi Puri: Follow the step by step

This is quite a simple dish to prepare and assemble, and everything can be prepared well in advance; here is a simple way of making this popular chaat at home.

Preparation of Filling

1. Boil Potatoes – Boil the potatoes in a pressure cooker or in a pot until they go soft. When they have cooled off, peel and mash them very well.
2. Masala Mix : Mash potatoes along with the onions, cumin powder, chili powder, chaat masala, black salt, and normal salt. Mix well.
3. Fresh Greens : Add coriander leaves for freshness. You can add some boiled chickpeas as well if you are in the mood to pick handful for crunch and extra protein.

Yogurt Preparations

Top with plain yogurt. Yogurt is thick and creamy. Chill the yogurt before use. Cold yogurt adds a refreshing flavor to the Dahi Puri.

1. Beat Yogurt –Take 1 cup thick plain yogurt and beat it smooth and creamy. If the yogurt is too thick, add a little water to loosen it but enough to remain thick enough to drizzle on the puris.

2. Refrigerate Yogurt– refrigerate the yogurt for at least 30 minutes before assembling as cold yogurt adds freshness to the dish.

Step 3: Chutney Preparations

1. Tamarind Chutney- This can be prepared at home or can be bought from the market. It should have a sweet and sour taste and a little thick in consistency. To prepare tamarind chutney, boil the pulp of tamarind with jaggery, sugar, and spices including cumin and chili powder till it thickens.

2. Green Chutney – Available ready, or prepare your own by putting all the following in a blender-green chutney of mint leaves, coriander leaves, green chilies, ginger, lemon juice, and salt. This chutney has to be fresh as it is required with a slight pungency to complement the yogurt.

Step 4: Preparing the Dahi Puri

Now that everything is ready, let’s put everything on a plate together- Dahi Puri.

1. Bore out Portions of Puri** Stab tiny holes and poke it deep with your little finger, therefore you will get creating a dent where you shall be adding potato mash up accompanied by yoghurt in such cavity, thus nothing more do you want filling in that particular middle part of Puri.

2. Stuff the Puri with Potato Mixture** – Fill each puri with a little of the potato filling. A little pressing should be applied so that it doesn’t get pushed out from inside.

3. Spread Yogurt – After the potato filling is placed into the puris, apply a spoonful or drizzle chilled yogurt over each one liberally. Apply enough yogurt so that the bite is creamy.

4. Put Chutneys – Now add tamarind chutney and green chutney above the yogurt inside the puri. One way to put those chutneys is to just make a zigzag line from top. Beautiful presentation indeed.

5. Garnish Sev and Fresh Coriander/Herbs: Sprinkle sev on each puri just before serving as a crunchy bite and then garnish them with chopped fresh coriander leaves. A few pomegranate seeds can be sprinkled to add color and sweetness too.

6. Serve Immediately – Dahi Puri is best enjoyed immediately after it is assembled, while the puris are still crispy and the yogurt is cold. If the puris sit for too long, they may absorb the yogurt and chutneys, becoming soggy.

Step 5: Enjoy!

Finish Dahi Puri fresh. It is such a fun festival to break up all those flavors in your mouth. The crunch of the puris, smooth creamy yogurt and tangy chutneys and fresh herbs can be a complete treat to one’s senses.
Tips to make perfect Dahi Puri

– Fresh and Crisp Puri: Fresh, crispy puris are a must for the best texture. If you are using store-bought puris, make sure they are crispy. Alternatively, you can also make your own homemade puris for a more authentic experience.
– Chilled Yogurt: This recipe requires that your yogurt is chilled as that is where the refreshment factor of Dahi Puri lies. If you do not have thick yogurt, you can just strain the normal yogurt through a muslin cloth to remove all the excess water.
Spices to Taste: The best thing about Dahi Puri is that you can get it adjusted in terms of how spicy, tangy, or sweet you would like it.
Use Fresh Ingredients: Fresh cilantro, mint leaves, and pomegranate seeds add a refreshing freshness and balance to the dish.
It is good to serve the Dahi Puri fresh. For the purpose, the crunch will be gone off from puris soon. Potato filling as well as the chutney can be made before hand.
