Lemon Juice one Table spoon;   (Binding)To make stuffing Optional-Stuff Aloo Tikki : Tamarind and Mint Chutney According to preference
Corn flour/rice Flour;  2table-spoons
Finely chopped coriander-leaves  Tea Spoon
Optional-To boil and to mush pea’s -2  teaspun
Cheese.
For stuffing to and two optional   chutney as -Tamarind chutney or Ment Chutney  And binding
(to Fry)
– Shallow fry oil (vegetable oil or any neutral oil)

Preparing Aloo Tikki Steps

Aloo Tikki can be prepared pretty easily. Here are the preparation steps for that crispy and flavorsome treat.

Step 1: Boiling the Potatoes
Boil the potatoes first. Depending on the size, it can take up to 15-20 minutes. You may boil in a pot or a pressure cooker. The potatoes will cool down a little in some minutes and you then peel and mash into pure texture. Mash must not be lumpy, thus smooth in look.

Step 2: Temper the Spices
In a pan, heat a tablespoon of oil. Add cumin seeds so that they splutter. Next add ginger paste and garlic paste and add chopped green chilies, if available. Let all these sizzle for one minute or till the raw smell is gone. This is a critical step so that all the spices start their process and impart flavors into oil.

 

Step 3: Add the Masala
Put in the roasted cumin powder, garam masala, and red chili powder and stir well. Let all the spices be absorbed into the ginger, garlic, and cumin seeds. Stir it for approximately 30 seconds so that the spices can give out fragrance.

Step 4: Mix Masala with the Potatoes

Step 6: Shape the Tikkis
Once you have the potato mixture at a dough-like consistency, you take small portions of it, shape it by hand into round patties, and then fill them if you like your stuffed tikkis with a hole in the middle, stuffed up with mashed peas or cheese or chutney, then sealing it. Keep repeating till all the mixture is shaped into tikkis.

Step 7: Fry Tikkis
Add a thin layer of oil in a deep frying pan over medium. After it becomes piping hot, gently add the tikkis by being cautious about not crowding the pan since they may then stick to one another. When the tikkis become gold brown on each side and crunchy, that shall take approximately around 3 to 4 minutes on either sides.

Let it be there and develop its crispiness to gold brownish finishes; take the pan into paper towels where excess oil should drain once the tikkis are cooked.
Step 8: Serve the tikkis hot
Aloo Tikis are at their best when served hot, crispy with mint, tamarind, and curd chutneys. Alternately one may take as a side salad as in a special, more elaborate fare.
